The Sevruga Sturgeon (acipenser stellatus) caviar or otherwise known as the Starry Sturgeon is a species of sturgeon that come from the Caspian and Black Seas. They are a anadromous species, meaning that even though they spend most of their time in the sea, they will swim up river in order to spawn. Due to this, the Sevruga sturgeon can be found in many of the rivers that feed into the Black Sea and the Caspian Sea. Sevruga are known to have some of the most valuable caviar from all other species. The only caviar that is more valuable than Sevruga would the pure Beluga Sturgeon caviar.
