Culatello. Price per 6lb appox. Culatello Domestic. Everyone knows Prosciutto di Parma or Prosciutto San Daniele or Hamon Serrano and all the other prosciutto on Earth. But only a minority, included your humble servant but only recently, has knows about clitella which is the Parma Prosciutto par excellence. Culatello Domestic represents only the center of the pig’s haunch and it is the most delicious part of the pig doing everything the prosciutto does but better. Knowledgeable restaurateurs and store owner have been buying them half a dozen at the time. I had no idea why until I taste it not long time ago. Once you have hooked your customers on culatello they are yours forever. Ha ha ha!
