Italians produce some 450 different types of Italian cheeses. In the north, cow’s milk cheeses prevail, led by the grana family of Parmigiano Reggiano DOP and Grana Padano DOP. Those firm cheeses, of granular texture, are used for grating. Other popular northern Italian cheeses are blue-veined Gorgonzola, Fontina DOP, Taleggio DOP, Raschera DOP, Bitto DOP, Casera DOP, Stracchino and Robiola. In central and southern Italy, cheese from sheep’s milk is called pecorino, distinguished as Romano. Southern Italians make a variety of pasta filata cheeses (Mozzarella Burrata), worked into strands before taking form.
