With a dark brown background and deep purple speckles, it maintains its gorgeous and plump oval shape during cooking. It is sometimes referred to as the peacock bean since its coloring is as flashy as a peacock’s tail feathers. They pale only slightly after soaking and cooking. Both earthy and meaty, Pavoni are full of sweet, chestnut-like flavor. They leave an almost mineral taste on the finish. They make a nice addition to soups and bean salads.
