This Gourmet Cheese is characteristically aromatic yet mild in flavor and features tangy, meaty notes with a fruity finish. The texture of this Italian cheese is moist-to-oozy with a very pleasant melt-in-your-mouth feel. The combination of the soft texture, pungent aroma, and buttery flavors has proven to be addictive especially when spread on fresh crusty bread. Taleggio is an excellent table
cheese: it can be served as a second course or at the end of the meal,
where it is delicious accompanied by fruits such as apples and pears.
Taleggio must be served at room temperature to bring out fully its taste
and aroma. it is not necessary to cut away the rind: scraping is
sufficient. In addition, since the cheese ripens from the surface
towards the centre, it is the outermost part that is most mature and
therefore most flavourful. Taleggio is especially versatile in cooking:
used in the preparation of pasta, dishes, risottos, soups, omelettes and
salads, it is also a precious ingredient in some types of pizza and
crêpes. It melts very readily and is well-suited for making fillings
because it is easily blended with other ingredients. In addition, it
browns quickly and is therefore suitable for gratins.
