White Alba truffles are only available from September to December of the year, almost exclusively from one part of Italy. White Truffle is a sublime ingredient that can be used to add the unforgettable to any dish. There are hundreds of species of truffles, but the fruiting body of the white truffles are highly prized as food. Edible truffles are held in high esteem in French, Spanish, northern Italian cooking, as well as in international cuisine. We import them three times per week from Italy. White Truffles (Tartufo Bianco) can be in a vacuum package or in an air-tight container with a minimum of air space in order to conserve their aroma. White Truffles can also be stored in olive oil.
