Made in the Savoie region of the Alps, this French Raclette Livradoux is made of pasteurized cow's milk and it's aged for at leats 5 months according to the French tradition. During the maturing period, this cheese develops its complex flavor and excellent melting qualities. This French Raclette has a thin, brownish-orange rind and a semi-soft yellow-ivory interior texture dotted with small holes. When melted, the cheese turns its surface into a golden, bubbling delight and releases a luscious creaminess, revealing its complex milky flavor with nutty undertones, buttery notes and subtle hints of creaminess. 

The name of the cheese comes from the French word "racler" which means "to scrape" as this cheese is mainly enjoyed melted in the famous Raclette dish typical of the French tradition, using special household appliances called "raclettes", specifically used for this purpose. In the raclette, the cheese is gently melted and scraped onto a plate of steaming potatoes, charcuterie and pickled vegetables, as the cherished French tradition suggests. 

In addition to the French dish, Raclette is a versatile ingredient, lending its distinctive character to an array of culinary creations.
