Olive is one of the most important ingredients in Mediterranean cuisine. The olive tree is one of the three sacred plants (along with the vine and the wheat). It has been cultivated in the "Sabina" area of millennia. Traces of olive use date back to the sixth to seventh centuries. In Sabina, the olives are grown on small plots, mostly owned by local families, and harvested by hand.

The “Sabina area” is an area with the DOP quality mark; it includes the municipalities of Rieti and Rome.

Extra virgin olive oil with Sabina Protected Designation of Origin was awarded European recognition in 1996. The cultivation of olive trees and the production of oil in Sabina have a multi-millennial tradition, as evidenced by the thousands of majestic secular olive trees and the numerous historical testimonies archaeological sites from the Roman and pre-Roman periods.

Collection and extraction:

Harvested by hand with the help of small shakers, the olives are placed in 20 kg perforated boxes and taken to the mill within 4 hours. Gastronomy

Extra virgin olive oil is an easily perishable food that needs to be properly preserved to keep its organoleptic characteristics intact. It is therefore advisable to store it in a cool place away from light, at a temperature between 14 and 18 ° C, away from heat sources and products that give off particular odors. It is also advisable to consume it within 4-6 months from the pressing, to enjoy it in the period of maximum expression of its flavor.

Olive picking and olive oil extraction takes place between the 1st of October and the 31st of January of each crop year. The olive oil Sabina achieved the D.O.P. (Protected Designation of Origin) status in 1996. Sabina is also I.G.P. (Protected Geographical Indication) protected.
