 Recipe for Pizza

Ingredients for 2 people

  • 250g of Molino Pasini Pizza Flour
  • 15g of fresh yeast
  • 130ml of water
  • 1 teaspoon of honey
  • 1 tablespoon of Extra Virgin Olive Oil
  • 10g of  fine salt
  • pepper as needed
  • Tomato sauce
  • Mozzarella Cheese
  • Oregano
  • Capers (optional)

Method

Dissolve the honey and yeast in a glass of room temperature water. Mix the flour with the dissolved yeast, the remaining water, salt, and oil, and when the dough is smooth and uniform, form it into a ball and make an X-shaped cut on the surface to allow the dough to expand.

Let it rest for about 40 minutes in a large container at room temperature, covered with plastic wrap. Divide the dough into two pieces, let them rest for 15 minutes covered, and then stretch them into two 28cm oiled baking trays. Let it rest for an hour at room temperature, then finish stretching the dough over the entire surface of the tray and create the pizza crust edges. Season to taste with tomato, oregano, and capers or other toppings, and bake in a preheated oven at 230-240°C for about 7 minutes. Remove, add mozzarella, and bake for another 4 minutes.

In the mood for Focaccia instead? Follow the same procedure as for the pizza, but instead of dividing the dough, stretch it onto a rectangular baking tray. After the third rest, brush the surface with oil and bake in a preheated oven at 230°C for 10 minutes.
