Stracchino Cheese of Lombard origin. The name comes from the word "stracc" which in regional dialect, means "tired." According to tradition, the name derives from the fact that the milk that was originally used for the production of this cheese was that of the cows returning from the fields during summer: according to the shepherds were tired, because they produced in smaller quantities.

However, as often happens with local traditions, the versions are more than one: according to others, the cows and the milk were "stracc", tired, because the original production of the cheese took place in winter, with the milk produced by cattle fed on dry grass in the barn, which was less rich in nutrients.

Most of the stracchino's fats are saturated: 70% of the total fat content. Like all cheeses, therefore, stracchino should also be consumed in moderation.

According to the principles of the Mediterranean diet, a portion of fresh cheese could be consumed 1-2 times a week as the main source of protein in a meal.

Stracchino cheese made according to the original recipe is also a source of salt: a 100 g portion already contains 1 g of salt. This consideration is useful in the table and in the kitchen: when using stracchino you should reduce the use of salt in other dishes, and prefer spices to flavor pasta or a salad.

Interesting is the content of mineral salts and vitamin B12: 100 g of stracchino already guarantee 43% of the daily requirement of calcium, 38% of that of phosphorus and 60% of that of B12.

Recipe of a single dish with stracchino

Healthy eating according to the principles of the Mediterranean diet is also about being aware of the nutritional values of the ingredients. A course of pasta seasoned with peppers and rocket, for example, is a tasty and colorful first course. The addition of stracchino enriches the recipe with proteins and fats: a sufficient quantity for a meal.

Ingredients for 4 people:

 

  • 320 g durum wheat pasta;
  • 400 g red pepper;
  • 200 g stracchino;
  • 3-4 tablespoons chopped rocket

Boil the water to cook the pasta and, in the meantime, wash and cut the peppers, which you will then stew in a non-stick pan, add a ladle of the cooking water. Drain the pasta, pass it in the pan with the peppers, add the stracchino and mix well. Serve hot with a little rocket to decorate and color each dish.

As already pointed out, the stracchino contains a certain amount of salt, for those who prefer intense flavors the pasta can also be seasoned with a little pepper.

What is different compared to other fresh cheeses

Thanks to its special flavor it has the advantage of combining easily at the table with different dishes. For example, it can be easily used as a spreadable cream for a quick and practical second course or as an ingredient to give risotto, pasta and other pasta dishes an extra touch. But is stracchino good if you're on a diet or getting fat?

From a nutritional point of view, stracchino provides a lower calorie intake than mature cheeses. When consumed in the right quantities it can be suitable for those on a diet to vary the menu, compared to other fresh cheeses. It contains a greater quantity of saturated fats, which when consumed in excess can have an impact on overweight, pressure, cholesterol, cardiovascular diseases and many other disorders.

In order to avoid the risk of getting fat, the advice is to consume it as an alternative to other sources of protein such as eggs, meat, fish and dairy products up to a couple of times a week, not exceeding 100 grams per serving and choosing a type that contains less fat and salt. To control the intake of cholesterol that can be problematic for the health of the heart and arteries, it is good to always combine it with fibers, which are excellent sources of vegetables, especially raw, which help to lower the levels of "bad" cholesterol and promote satiety.
