Three Milk Robiola Cheese

On a fertile and irrigated plain in Northwest Italy, between the rolling hills of The Langhe and the steep slopes of Bisalta, sheltered and protected, calm and silent, this is where our farm is found. Here, time seems to have stopped. As it was a hundred years ago, we use only rich creamy milk from our cows, chosen from among the best and fed with fresh, uncontaminated grass from our pastures during the summer that is then dried into sweet smelling hay for the winter. It is this unforgettable fragrance that yields the rich and bountiful milk that is so important in the art of cheese making.
