Tuscany has its very own unique prosciutto called "Prosciutto Toscano DOP". It differs in taste from a better known sweet "Prosciutto di Parma" and "San Daniele". Prosciutto Toscano is often considered saltier and more flavorful because of the Tuscan spices that are used during salting stage, among them are rosemary, juniper, bay leaf, garlic and pepper. Although Prosciutto Toscano is saltier than other prosciuttos, it is not too salty because the salt and aromatic herbs penetrate the meat and give it a very special flavor.

Production methods include very careful selection of raw material. The pigs' thighs must come from specific Italian regions that are known for a better quality. The process takes place in various “prosciutterias” or prosciutto making establishments in Tuscany where the pork is trimmed, salted, and seasoned with spices several times to penetrate the flavor, then it is left to cure in well-ventilated room being hung for at least one year. Only after all of these procedures the prosciuttos can be marked as "Prosciutto Toscano DOP".

Suggestion: Slice and enjoy the prosciutto as is. You may cook or fry as desired - a great snack is to roll these slices on mozzarella or on veggies like asparagus.
