Description

Letizia Extra Virgin Olive Oil DOP

Letizia Extra Virgin Olive Oil DOP from the hills of Monti Iblei, above the Sicilian town of Ragusa, is one of the best intensively fruity olive oils in the world, year after year. It is made from 100% Sicilian Tonda iblei, this deep green and slightly yellow shimmering olive oil is a perfect example of extremely aromatic and fruity olive oil. The variety of flavors ranges from fresh grass to tomatoes to fine almonds. In the aftertaste, it is a harmonious olive fruit accompanied by a delicate bitter note.

This bitterness is caused by polyphenols. Among other things, they are an expression of the high quality of olive oil. The intense Letizia olive oil is very well suited for salads and antipasti, as well as for stewing vegetables, for pickling vegetables, cheese and for refining pasta dishes. It sets accents everywhere with an intense aroma of the oil is desired. Letizia Extra virgin Olive Oil is an unfilled olive oil. Thus, natural turbidity with isolated suspended particles is quite normal and characterizes the high quality of this product.

Characteristics of Letizia extra virgin olive oil

Color: At sight it is opalescent and of intense green color with delicate golden yellow tones.

Smell: Intense fruity, broad and perfumed with clean herbaceous notes of corn leaf and fresh tomato.

Taste:High palatability, good structure, remarkable fluidity, and aromatic persistence, with particular tones of fresh tomato and very harmonic bitter and spicy contents.

Use:It is excellent on salads, legume soups, fish and roast meats.

What makes good Letizia Extra Virgin Olive Oil

  • Good olive oil is young: unlike wine, olive oil does not get better as it ages. Oxygen deprives the oil of the aromas over time.
  • Good oil tastes fruity, but also bitter and spicy: this is due to the polyphenols. These are the valuable ingredients of fresh olives that are so healthy.

  • Good oil comes from early harvested olives: the earlier harvested, the less oleic acid is contained in the olives, the higher the quality. The ideal harvest period is October and November.

  • Good oil is pressed quickly: Top oils are only between 3 and 4 hours between harvest and pressing. Almost no harmful oxygen gets to the olives.

Whether it's insalates, Caprese with tomatoes, verdure, pasta of all varieties, pizza, beefsteak, tuna, mozzarella, carpaccio - the fine flavors of extra virgin oil are always the soul of Italian cuisine.

Practical tips - not only for gourmets

This Italian olive oil is an ideal companion for meat, fish, pasta, vegetables, risotto, and salads when cooking and frying. The amount of oil you store for daily use in your kitchen is best stored in a dark glass jar. A larger supply of olive oil should be stored in a dark, cool place - for example, in the local cellar. Bottles or jars should always be tightly closed and the oil should not be exposed to high temperature or large temperature differences when stored.

Recipe with Letizia Extra virgin Olive Oil

Ingredients

Serving size 6: 4 large ripe beef tomatoes, about 1 kg, or 3 cans of 400 g of iced tomatoes, 5 guajillo chillies, about 25 g, 2 Ancho-chillies, about 25 g, 1 chipotle chili, 4 tablespoons of Letizia Extra virgin Olive Oil, 1 onion, finely chopped, 3 garlic cloves, chopped, sea salt and freshly ground black pepper, 1 large bunch of cilantro, stems finely chopped, most of the leaves roughly chopped, some as Leave garnish completely, 1 handful of oregano and thyme leaves, chopped roughly, 1 l of chicken broth, 1 pinch of brown sugar to taste

  1. If fresh tomatoes are used, preheat the oven grill and lay out a baking tray with aluminum foil. Grill the tomatoes on top of the rack with occasional turning for 15 minutes until they are completely blackened. Remove skin.
  2. In the meantime, prepare the chilies, then soak for 15 minutes in a bowl of boiling water. Put Letizia Extra virgin Olive Oil and onion in a pan and stir over low heat. After 5 minutes add garlic and plenty of salt and pepper until the onion is glassy. Stir in herbs and tomatoes.

  3. Cook until the tomatoes disintegrate, then add the drained chilies and chicken broth. Boil, then reduce the temperature so that the soup is only simmering. Simmer for 5 to 10 minutes, then puree with the hand blender and season to taste.

  4. If necessary add salt and brown sugar to accentuate the taste of the tomatoes. Fill the soup in preheated plates and serve with bowls of fried anchovies, sour cream, crispy totopos, coriander, feta, avocados, and lime wedges.

Initially I tried this Olive Oil in Sicily & fell in LOVE with it's intense olive-peppery flavor! Alma Gourmet seems to be the only Stateside source for this product. For years Letizia has been my only choice when an ultra-fine finishing oil is needed! It also makes a great gift... I buy it by the case!!!
