Letizia Extra Virgin Olive Oil DOP from the hills of Monti Iblei, above the Sicilian town of Ragusa, is one of the best intensively fruity olive oils in the world, year after year. It is made from 100% Sicilian Tonda iblei, this deep green and slightly yellow shimmering olive oil is a perfect example of extremely aromatic and fruity olive oil. The variety of flavors ranges from fresh grass to tomatoes to fine almonds. In the aftertaste, it is a harmonious olive fruit accompanied by a delicate bitter note.

This bitterness is caused by polyphenols. Among other things, they are an expression of the high quality of olive oil. The intense Letizia olive oil is very well suited for salads and antipasti, as well as for stewing vegetables, for pickling vegetables, cheese and for refining pasta dishes. Recipe with Letizia Extra virgin Olive Oil

Ingredients

Serving size 6: 4 large ripe beef tomatoes, about 1 kg, or 3 cans of 400 g of iced tomatoes, 5 guajillo chillies, about 25 g, 2 Ancho-chillies, about 25 g, 1 chipotle chili, 4 tablespoons of Letizia Extra virgin Olive Oil, 1 onion, finely chopped, 3 garlic cloves, chopped, sea salt and freshly ground black pepper, 1 large bunch of cilantro, stems finely chopped, most of the leaves roughly chopped, some as Leave garnish completely, 1 handful of oregano and thyme leaves, chopped roughly, 1 l of chicken broth, 1 pinch of brown sugar to taste

  1. If fresh tomatoes are used, preheat the oven grill and lay out a baking tray with aluminum foil. Grill the tomatoes on top of the rack with occasional turning for 15 minutes until they are completely blackened. Remove skin.
  2. In the meantime, prepare the chilies, then soak for 15 minutes in a bowl of boiling water. Put Letizia Extra virgin Olive Oil and onion in a pan and stir over low heat. After 5 minutes add garlic and plenty of salt and pepper until the onion is glassy. Stir in herbs and tomatoes.

  3. Cook until the tomatoes disintegrate, then add the drained chilies and chicken broth. Boil, then reduce the temperature so that the soup is only simmering. Simmer for 5 to 10 minutes, then puree with the hand blender and season to taste.

  4. If necessary add salt and brown sugar to accentuate the taste of the tomatoes. Fill the soup in preheated plates and serve with bowls of fried anchovies, sour cream, crispy totopos, coriander, feta, avocados, and lime wedges.

The fruit is hand-picked and cold-milled within 12 hours on continuous cycle machines, and in strict compliance with the standards and regulations governing D.O.P. (Protected Designation of Origin) Monti Iblei production.

At present the olive groves extend over a total of 21 hectares, with more than 2450 individual trees contributing to an average annual production of 100 hectoliters. The company stretches out over its hilltop surroundings from altitudes of 320m to 370m above sea level. The olive groves are formed of "Tonda Iblea" plants that account for 90% of the total with "Nocellara Messinese" providing the remaining 10%. They are grown extensively and head-pruned.
