Acetum White Wine Condiment with Grape Must is obtained from a mixture of grape must and high-quality white wine vinegar. A sweet alternative to normal white wine vinegar. With its fruity floral aromas and a harmonious sweet-sour note, it makes an excellent addition to sauces and salads.

Ingredients:

  • White wine vinegar 20% (sulfites)

It is obtained from the must of Modena grapes. It was originally intended as a digestive after mealtimes. Gradually it has found its way into the menus of famous international chefs, starting with appetizers and ending with desserts.

The must is cooked slowly on an open flame in the open pot, then it is concentrated to one-third of the initial volume. Then it is aged in the attic of the houses during the hot summers and icy cold winters. The vinegar is gradually transferred to ever-smaller barrels of a different wood (oak, mulberry, chestnut, cherry, and sometimes juniper).

As a luxury variant among the balsamic kinds of vinegar, Aceto Balsamico Tradizionale is usually under the DOP designation Aceto Balsamico Tradizionale di Modena. Such a balsamic vinegar may only be obtained from regional ingredients. More specifically, only certain grape varieties, such as Trebbiano, Lambrusco, and Sauvignon from Emilia-Romagna, may be boiled down to make Acetum White Wine Vinegar of Modena with Grape Must. Without the addition of preservatives and dyes, this traditionally made balsamic vinegar ages for at least 12 years in oak, chestnut or cherry oak barrels. If the maturity of the traditional balsamic vinegar lasts even 25 years, it gets the title "extra Vecchio".

Acetum White Wine Vinegar of Modena with Grape Must develops an intensely fruity and slightly sweet flavor during ripening. Its consistency is barely liquid at the end but resembles syrup. Because much of the liquid evaporates over the years, only small amounts can be sold. 

The history of Balsamic

Around 1600, the nobles settled in the northern Italian city of Modena Acetaias. These are attics for vinegar barrels. It owes its existence to the interaction of the unique, local microclimate.It is said that it was created by sheer coincidence. Someone forgot some boiled grape must in the attic, and over time, they developed the unique, distinctive qualities that we now know from Aceto Balsamico Tradizionale.

This valuable vinegar soon became part of the aristocratic family fortune: it regulated its whereabouts in the will or bequeathed it as a dowry to young, noble brides. Thus, since the Renaissance, vinegar from the manufacturer of the Duchy of Este, known as "Acetaia", has been praised as the "Black Gold of Modena" in the highest strata of the European nobility.

It was only in the twentieth century that precious vinegar left the secret attics of the noble palaces of Modena and became the epitome of the culture and culinary tradition of the region.

Which wood gives the Balsamic which taste?

The choice of wood is a secret in the production of vinegar. The barrels of different woods bring the strong, fruity-aromatic notes into the noble elixir.
