The bronze drawing, the water of the nearby Monti Lattari and the particular drying process are the main characteristics that make these Paccheri di Gragnano special. This makes it suitable for lunch, based on traditional Campania sauce.

Taste

In these paccheri of Gragnano, there are all the characteristics of the craftsmanship of the place of origin that make it unique. Its roughness, due to the use of bronze drawing, goes very well with sauces from the Campania and Italian tradition in general, for moments of pure taste. Paccheri with scarpariello (with pomomodorini del piennolo) accompanied by a glass of full-bodied red wine or paccheri with seafood accompanied by white wine, are two of the most appetizing dishes of traditional Campania cuisine, to be served any day of the week.

 

Paccheri of Gragnano pasta is produced in numerous and varied formats, but tradition crowns a format as a symbol of the place: the " pacchero". The name comes from an anecdote. Towards the end of the 19th century, Neapolitan “scugnizzi” used to collect pasta processing waste during drying. Sometimes someone kept the harvest for himself and when the master found out he used to give him a resounding slap, in the Neapolitan dialect " pacchero"

Italian Paccheri with tomato sauce

The Italians are known for their simple recipes for keeping the real and natural taste of the food. "Paccheri" is a type of pasta that goes very well with tomato sauce because it enters their large caves.

The ingredients are really easy to find in any season. You need about 150 g of cherry tomatoes per person and onion or garlic (as desired).

The spices are optional.

1.   Fire with wood to cook pasta quickly

2.   Add onion or garlic to a pan with extra virgin olive oil

3.   Wait a minute and then add half of the sliced cherry tomatoes

4.   Fill a pot with water: the bigger the flame, the faster the water will boil.

5.   If the pasta is "al dente" add the tomato sauce and mix well.

6.   Add basil or pepper if you like! Of course, we love it!

7.   Enjoy one of the best simple flavors ever, pasta with cherry tomato sauce!

Organic Paccheri Pastai Gragnanesi I.G.P. (Protected Geographical Indication). This pasta has a straight cut and a diameter of 30 mm. The origin of this shape refers to the Neapolitan word "pacchero" or slap. The name could refer to the slapping sound that it makes when cooking with sauce or to the excellence of this shape, that can “stun” you like a "pacchero". This cut is originated from Campania or Calabria, Italy.

Suggestion: They are a great success in timbales with meat sauce or with cheese and aubergine’s filling. The Pasta di Gragnano should be cooked "al dente", which means only to the point at which the pasta is still firm, then added to the sauce where it will cook a little more. Afterwards it is served right off the stove.
