Orecchiette Italian Fresh Pasta are a distinctive Puglian type of italian pasta shaped roughly like small ears, hence the name “orecchio” or ear and “orecchiette” or little ears. They are about 3/4 of an inch across, slightly domed, and their centers are thinner than their rims, a characteristic that gives them an interestingly variable texture, soft in the middle and somewhat chewier on the sides.

Drying takes place at 30/40 ° C for a period ranging from 8 to 24 hours so that the pasta preserves all its flavor.
