Trofie fresh pasta Sapori del Vallo is a typical pasta of the Ligurian culinary tradition prepared with a mixture of durum wheat flour and water. Of rather a small size (usually 3-4 cm), the Trofie is distinguished by an elongated shape, thin, irregular, curled, thicker in the center and thin at the vertices. However, there are several variations of this pasta. There are several variations in the preparation of the trophies.

One of these, among the most interesting and known, involves a mixture of chestnut flour and takes the singular name of "trofie bastarde". These, characterized by a decidedly sweeter taste than the traditional trophies, are usually seasoned with walnut sauce. A tasty possibility is to mix white and "bastard" trophies to mix the flavors. Another variant is the trofie with cuttlefish black.

The Trofies have been prepared in Ligurian kitchens for a long time, so much so that they are said to have been born at the time of the Crusades. If today the production is mostly industrial, made with special machines, in the past, it was the Ligurian women who prepared this pasta by hand. For the processing and to give the characteristic shape they used a sort of wooden knitting needle around which they rolled a filament of pasta, which was crushed with the palm.

1 garlic clove

100 g green beans

extra virgin olive oil to taste

60 gr parmesan

300 gr potato

pinch of salt

500 gr semolina pasta (of durum wheat)

40 gr pecorino

50 gr pine nuts

1 bunch of basil

extra virgin olive oil to taste

It is a tasty and light first course, of fresh pasta with vegetables typical of the traditional cuisine of the Liguria region, ideal for all occasions. The Trofie Fresh Pasta Sapori del Vallo with potatoes and green beans are ready in just over half an hour, with the irresistible scent of Ligurian basil. It is a healthy and vegetarian dish that appeals to adults and children. If you are fond of Ligurian pesto, you should try to do it with the traditional marble mortar and the wooden pestle, you will be able to better feel the fragrance of the ingredients.

1. Make pesto. Put the container of the mixer in the freezer for at least half an hour to cool it: in this way, the taste of the pesto will be better and the leaves will not oxidize. Combine the leaves of a large bunch of Ligurian basil cleaned in a mixer with a cloth, a clove of garlic and a pinch of salt. Blend then add 50 g of pine nuts. Blend again, adding 1 dl of extra virgin olive oil. Finally, mix both kinds of cheese (40 g of pecorino-cheese as well as 40 g of Parmesan cheese) grated: at the end, you will have to obtain a fine and homogeneous pesto. If you have time, you can also make a mortar pesto.

 2. Prepare the vegetables. Peel, wash, dry and cut 300 g of potatoes into small pieces; wash, dry and check 100 g of fine green beans. Bring plenty of water so as to boil pot. put salt followed by beans which should be cooked for 1-2 minutes. Finally add potatoes then cook for about 2 minutes, having added the oil.

3. When the vegetables have softened, although still al dente, add 500 g of fresh trophies, stir and continue cooking for another 6-7 minutes. Drain pasta and vegetable al dente, keeping aside a little cooking water to dilute the pesto.

4. Put the trofie in a hot bowl, season with the pesto and serve immediately.
