History

Pasta is famous all over the world since the end of the 16th century. Favored by the climatic conditions, the production of the "white gold" of Gragnano enjoyed its golden age in the 19th century and especially after the Italian unification in 1861, which opened new markets in the north of Italy. The twentieth century was more difficult for Gragnano's pasta: the two successive wars and the arrival of industrial competitors in northern Italy weakened the traditional production of Gragnano.

In 2005 Gragnano was the first city in the world to obtain the PGI (Protected Geographical Indication), thus becoming the world capital of pasta.In the center of Gragnano, which is located 20km from Naples, is the crowned establishment has its headquarters.

With an artisanal production and great respect of the raw materials (semolina of wheat, water), this recognized pasta manufacturer, produces at most only 50 quintals of pasta a day. The carefully selected semolina, a slow kneading with non-calcic water, the bronze matrix, the long drying and the harmonious balance between the ingredients. Experience from several centuries is the bases of the extraordinary products of this producer. The flagship of production is the homemade fusilli gragnano. The same attention is used in the production of many others. The soft surface roughness exalts any type of seasoning and promotes its absorption.

Cooking period

 

It takes 9 to 10 minutes to cook the spaghetti and then spend 2 minutes in the pan with a seafood preparation. Enjoy

    Pasta di Gragnano may be the best dried pasta that I've had the pleasure to eat. Cooked properly, the pasta is slightly chewier with a much heavier mouth feel than standard dried pastas. I first discovered this pasta in San Francisco at A.G.Ferrari Foods in San Francisco. Since I've moved away from the bay and have not been able to find this outstanding pasta in the Las Vegas, Nevada, area, I was pleased to find it online.
