Anchovies, also called Alici, are a bony fish spread throughout the Mediterranean, in the Eastern Atlantic, in the Baltic, in the Black Sea, and the Azov. Similar to sardines, anchovies have a thinner and tapered body, which reaches an adult length of 15-20 cm in length. The anchovies belong to the category of bluefish, with which they share the shape, size, and color of the body. 

Armatore selects exclusively the biggest Anchovies fished in the Amalfi Coast, and salt them in a  maturation process that takes place in chestnut wood casks for a minimum of 8 months. Once the casks maturation is over, Cetara’s Anchovies are cleaned from the salt, deboned and prepared to be conserved in olive oil. Thanks to this process the storage life is lengthened, without ruining the flavor and the quality of the Anchovies. 

Cetara's anchovies are very meaty and can be used in a variety of ways. Use them to create a simple appetizer with buttered bread or to enrich your spaghetti, pasta salads, eggs salads and tomato sauce or add them on top of your pizza after baking it.
