The Puntarelle are the most tender sprouts of the Catalonian chicory, a typical salad grown in Lazio and Puglia. Specifically, I Contadini Puntarelle are from Galatina, in the Salento area of Puglia, where they are transplanted in October and then harvested between January and February. The process starts with stripping the leaves and then manually cut the crisp, tender sprouts, known as  "scattuni" in the local dialect, which are then gently cured for a few days. After the maturation, the sprouts are then placed in oil without adding any aroma or spices. This long and meticulous process allows to preserve all the freshness and authentic taste of this specialty. Preserved raw, Puntarelle retain all their nutritional properties and their fragrance. 

Excellent with the traditional pucce bread as well as on frise bread and croutons, Puntarelle are exceptional to accompany meat and fish main courses such as battered anchovies, swordfish carpaccio and beef tartare. 

About I Contadini

I Contadini are located in Ugento, in the Salento area of Puglia. Edoardo, Emanuele and Gianna are the three Trentin siblings who grow, harvest, transform and prepare lots of vegetables, according to the strong traditions that are deeply rooted in the area. A childhood spent in the sunlit fields, where their grandpa Fiumano grew capers. Three very different siblings, united by a big dream. They have love for the land in their blood; they get up when it’s still dark, following nature’s rhythms, the seasons, and without ever losing their smile - an element that is as essential as water. Ingredients: chicory "Cichorium intybus L." (61%), sunflower oil, extra virgin olive oil, apple cider vinegar, sugar, whole salt, lemon juice.

Storage: store in a cool, dry place away from light and direct heat. After opening, store in the refrigerator and consume within 7 days.
