Manchego Cheese D.O.P is Spain’s most iconic cheese, produced exclusively from pasteurized milk of Manchega sheep raised in the historic region of La Mancha. Protected by D.O.P (Denominación de Origen Protegida) status, authentic Manchego can only be made in the provinces of Albacete, Ciudad Real, Cuenca, and Toledo, following strict traditional standards.
This Manchego is crafted during the months when the milk is at its richest, resulting in a cheese that is buttery, balanced, and aged to perfection. The distinctive zigzag pattern on the rind pays tribute to an ancient tradition, when wheels were wrapped in woven esparto grass during aging.
