Dried Porcini mushroom risotto

Ingredients:

300g of rice

80g of dried mushrooms

1 liter of broth

a small onion

extra virgin olive oil

½ glass of white wine

salt and pepper

a knob of butter

chopped fresh parsley

3 spoons of parmigiana.

How to cook:

Let the dried Porcini mushrooms come to life by putting it in hot water.

In the meantime, clean the onion and cut it.

In a saucepan, fry the onion with extra virgin olive oil.

Add the rice and let it toast for a few minutes.

Deglaze with white wine, and add the dried boiling hot water and broth little by little.

Cook over high heat and occasionally turn the rice over and add ladles of broth if necessary.

Once cooked, stir in butter, parmesan and add chopped parsley and black pepper.

You can now enjoy your meal.
